1 lb. ground beef
1/2 lb. Velveeta cheese, cubed (half of a full-sized box)
1 can Rotel, undrained
1 can sliced black olives, drained
1 can whole kernel corn, drained

Mexican Meatloaf | recipe

This is a different twist on traditional meatloaf. The twins — especially Kate — loved it and it wasn’t too spicy for them. Additional salt may be needed (I don’t like anything close to bland) and go easy on the cilantro (it can overpower the dish quickly).

Sausage Balls | recipe

 
This is truly one of my favorite breakfast/snacks/guilty pleasures. They are wonderful to travel with since they are great hot or at room temperature, and they freeze beautifully.

Refried Bean Soup | recipe

 
1 small onion, chopped
2 garlic cloves, minced
1 T. vegetable oil
1 (31 oz) can refried beans
1 (16 oz) can diced tomatoes, undrained
