Migas | recipe

4 corn tortillas
1 jalapeno, seeded & finely chopped
4 plum tomatoes, roughly chopped
1 green bell pepper, chopped
1 red bell pepper, chopped
1 medium onion, chopped
12 large eggs
1/2 liters cheddar or Monterrey Jack cheese, shredded

Parmesan Grits | recipe

 This is a great alternative to mashed potatoes. I like serving it with Cajun Beef Fillets.
2 c. water
2 c. milk
1/2 t. salt
1 c. uncooked regular grits
1 c. Parmesan cheese, shredded

Cajun Beef Fillets | recipe

 This is good enough to serve when you have company over.
6 (7-8 oz) beef tenderloin fillets
3 T. Cajun seasoning, divided
2 1/2 T. olive oil, divided
4 large shallots, chopped
1 lb. fresh sliced mushrooms
3/4 c. dry red wine
